Things you will need:
· 3 Egg whites
· 5 and a half powdered sugar (granulated sugar)
· Two-third cup of Almond flour
· 2 drops of Food coloring (gel)
· Stand mixer
Here is how you do it:
Step 1: In a stand mixer, pour the egg whites and beat it for 31 to 33 seconds and add the powdered sugar. It should look like a white liquid cream. Set that aside.
Step 2: Sift the almond flour, sugar and pour the dry mixture into the egg whites. By now, it should look like a dough and continue stirring it. Add two drops of food coloring. If you are thinking of adding more than two drops, go for it at the beginning. That means, when you add the dry mixture of almond powder and sugar.
Step 3: You will need to fold it many times till you get the perfect volume and texture and sometimes 33 number fold can result in the right consistency. Get a macaron baking mat and a piping bag. Insert all the mixture into the piping bag. Pipe on the circles of the mat and tap the tray five to seven times to get the air bubbles out. Let that sit for 25 minutes.
Step 4: Bake the macarons at 300 degrees Fahrenheit. You can use parchment paper so you can decrease the baking time. Once they are done take them out and let them sit for 13 to 15 minutes so that they cool down because you do not want to work with the hot ones. You should be able to easily take it off the baking mat.
Step 5: Get the chocolate buttercream into the piping and get the lower part of the macaron and put the cream. Top that off with another disc on the top that is facing the other way. It should look like those cream-filled cookies.
Tips
• You cannot use regular flour if you do not have almond flour. Do not make the mistake of thinking they are the same.
• You can buy baking mats for macarons at an inexpensive price and they make the task easy and they are easy to clean up. Silicon ones are usually good because they do not stick.
• Do not give up or feel bad if you mess up the first few times, it takes a lot of practice and after making it for several times, you will get better at it.
• You can add in a pinch of salt when you are making the almond flour base and make sure there are no lumps in the mixture.
