Beef meatballs
Basic meatballs: You will need slightly more than a pound of ground beef, 2 eggs, 2 ounces of finely grated garlic, black pepper and salt, 1g of sugar, 3 cups of peeled and smashed tomatoes, one cup of olive oil and a cup of bread crumbs. In a bowl add the ground beef and the breadcrumbs. Beat the 2 eggs properly and pour them in the meat and bread crumb mixture. The salt and pepper are for seasoning so add them. Add the garlic and the tomatoes. Start combining them with your hands. After you get a fine mixture take out to make your first ball. Roll the pieces into balls. Take your skillet and add the once cup of olive oil. Fry them.
Be sure the bread crumbs are fresh and not expired and if they are too dry add a little milk to maintain the moisture.
Swedish meatballs: In order to make the Swedish meatballs, you will need 1 cup of heavy whipped cream, 3 tablespoon butter and 3 tablespoons of flour. In a pan, melt the butter and add the flour. Add the whipped cream and stir until it has a perfect consistency. This is for the cream sauce for the Swedish meatballs. To make the meatballs, add breadcrumbs, salt, pepper, 2 beaten eggs, 1 tablespoon of garlic and ginger paste and 1 pound ground beef. Make them into a round shape and fry them in the oil. Do not overcook them because you will need to put them in the pan where the cream sauce was and let it cook on low flame.
Chicken meatballs
Oven-baked meatballs: Rub olive oil over an oven tray and set your oven to 350 degrees Fahrenheit. While it is getting hot, make the chicken meatballs. In a large bowl, mix 2 beaten eggs, 1 pound of minced chicken, salt, pepper, and one and a half ounces of garlic paste, 3 ounces of basil or cilantro and a cup of breadcrumbs. When your mixture is ready, take pieces of the mixture and turn them into round-shaped balls. Put them on the greased oven tray in a serial and bake them for 25 minutes.
Cheese-filled meatballs: You will need 1 cup of fresh Parmesan cheese and 1 cup of fresh mozzarella cheese to be present inside the chicken meatballs. Turn both the cheese into cubes and store them in the freezer. Make a mixture of 1 pound of minced chicken, 3 ounces of cilantro, and an egg, a cup of breadcrumbs, salt and 2 ounces of grated onion. Mix them and roll them into balls. Put the cheese cubes in the center of each meatball. Bake them in the oven for 25 minutes.
Additional information:
• Cooking in the oven is much healthier than frying with oil in the stove.
• While rolling the ball with your hands, make sure you apply some olive oil to your hands or else the meat will stick.
