5 large russet potatoes, cleaned and not peeled

5 ounces’ cup mayonnaise

3 chicken eggs

2 ounces’ sweet relish

2 tbsp. yellow mustard

2 cup sliced green onion (white and green parts)

2 ounces’ cup dill relish

3 ounces diced celery

1 tsp cracked black pepper

half tsp garlic powder

1.5 tbsp. dill pickle juice

1½ tsp onion powder

paprika

Salt to taste

Here is what you will need to do:

Step 1: Potatoes tend to be dirty so clean them under running water and if possible scrub them with a brush. Do not take the peel off just yet. Place them in a large pot and cover up with cold water and set them to boil. Boil them till they are soft and you can check my inserting a fork in it.

Step 2: Let them cool down since you are going to be working with them. Take the peel off and let them rest in a bowl. While they are cooling down, cut the green onions into small pieces. Wash the celery and cut them into small pieces. Do not wash them after you cut them. Clean them beforehand.

Step 3: There are eggs in this recipe, so boil them for several minutes till they are hard. While they are boiling, cut the potatoes in small cubes. Use a whisk to break the boiled eggs after you take the peel off. Do this in a bowl.

Step 4: In the bowl, add the potatoes, green onions, celery and the seasoning. You can add freshly grounded black pepper, onion powder, garlic powder and salt to taste. Mix them and it is time to make the dressing.

Step 5: Get another bowl and add the mayonnaise and the simple yellow mustard. Add the dill relish and the sweet relish and do not forget the pickle juice. Combine everything properly using a whisk. Pour the dressing over the bowl where you have seasoned the potato. Mix everything together and serve them in a salad dish.

Tips

• You can begin by washing the potatoes and cutting them into cubes and setting them to boil so that you do not have to do it later. You do not have to wait while the potatoes are cooling down and besides, the whole potato will take longer to boil whereas potato cubes boil a lot quicker.

• You can keep the boiled eggs and the boiled potato cubes in the refrigerator before you start the seasoning and dressing process because then you will not have to worry about chilling the potato salad and you will know the exact taste of your salad.

• You cannot skip out on black pepper and celery on this recipe. If you are looking for making it extra delicious add Worcestershire sauce in a small amount.
