Here is a simple recipe that will taste good but is easy to make. Here is what you will need:
6 ounces of Roasted Garlic
1 whole chicken (around 4 pounds)
2 tablespoon olive oil
Freshly ground pepper
Salt
Step 1: Start by roasting garlic. Instead of peeling the garlic cloves separately, you can save a lot of time if you just use a knife to cut the top part so that all the cloves get exposed. Drizzle them in olive oil and place them on a foil. Add salt and black pepper and wrap it up. Roast the garlic in the oven for 30 minutes at 300 degrees.
Step 2: In a bowl, take the roasted garlic out by squeezing them. Sprinkle some salt and add black pepper and mash them with a spoon or a fork. It should be around three-fourth cup. Set up the oven to preheat at 425 degrees for the chicken.
Step 3: Clean and wash the chicken and place it on a plate or a bowl. Insert your hand underneath its skin and make sure you can reach most of it. Take some the mashed roasted garlic cloves and place them under the skin. The chicken should not be frozen; it should have a regular temperature. It should be dry and not wet. Put the roasted garlic over there. Wash your hands and dry them because you will have to use them to cover the chicken with black pepper and salt.
Step 4: The wings can burn easily so keep them under the chicken, tie the drumsticks so that the cooking can be done properly. Make sure you have covered it in salt and pepper properly. Get a pan and add olive oil to it. Place the chicken there. Now insert it to the oven. The oil should be extra virgin olive oil. The pan should be a cast iron skillet. You should know that cast iron skillet is used mainly for roast chicken along with sautéed mushrooms, steaks etc. They last longer than other pans and is easy to use. It is going to be done in 40 to 45 minutes.
Tips
• If you want, you can add chives in the mixture when you are smashing the roasted garlic and making a mixture with the spoon or fork.
• You should not serve it immediately, let it sit for fifteen minutes. It will make the roasted chicken more delicious and juicy.
• Some people slice lemon and insert it to the cavity of the chicken. If you want you can do this as well.
